Guacamole

Did you know that avocado is an aphrodisiac? I must confess, I absolutely adore avocados.  If I had to be stuck on a dessert island with one food only – it would be the avocado.  They are so rich and creamy – my daughter and I simply slice one in half and just spoon out the avocado flesh straight into our mouths.  It is also divine on a slice of toast sprinkled with a little Himalayan salt. Great in a little homemade sushi rolls. Check out some sauce recipes here and here and here.  

But you know where the avocado really shines? Yeap – Guacamole! Enjoy with chips or eat it straight out of the bowl with a spoon!

Oh yeah, and avocados are rich in Vitamins A, E, fiber, easy to assimilate plant proteins, high in mono-unsaturated, heart healthy, cholesterol reducing good fats, anti-inflammatory…  Do I really need to go on? Or did I have you at “aphrodisiac”?

Ingredients:

6 avocados
2 limes or lemons, juiced
2 teaspoons salt
1 cup diced onion
6 tablespoons chopped fresh cilantro
4 roma (plum) tomatoes, diced
2 tsp minced garlic
2 Tbs of olive oil (optional)
2 pinches of cumin (optional)
2 pinches ground cayenne pepper (optional) 
 

Method:

In a medium bowl, mash together the avocados, lime/lemon juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in spices/oil. Refrigerate 1 hour for best flavor, or serve immediately.
