This yummy salad is a hit at any holiday party because of it’s festive colors, variety of textures, and delicious flavors! And it’s a complete meal in itself. Enjoy!

Ingredients:

4 cups cooked quinoa
6-8 oz greens (I used red kale and mizuna mix)
1.5-2 cups of pomegranate seeds (or seeds of 2 pomegranates)
1 cup of chopped soaked raw walnuts
2 cups of pear ginger vinaigrette

Method:

Soak Walnuts for 4-6 hours.
Cook Quinoa.
Take seeds out of pomegranates.
Make pear ginger vinaigrette.
Mix all the ingredients. Voila!
