Paleo Salsa Dip

“Cheesy” Paleo Salsa Dip

This “cheesy” paleo salsa dip is a crowd winner at your next football or fancy party. If you can’t eat real cheese, this is a very satisfying second.


1.5 cups of soaked cashew
All the cream from a can of coconut milk
4 tbs of lime juice
2 tsp of sea salt
1-2 cloves garlic, minced
3 tomatoes, diced
1-2 Shallots, minced
1 Jalapeño pepper, minced
Optional: cilantro


Soak cashews for 1-2 hrs. Drain and Rinse cashews. Refrigerate a can of coconut milk, to separate the cream. Process the cashews first till creamy consistency.
Combine the coconut cream, lime juice, sea salt and garlic with cashews and continue to process until desired creamy consistency.
Add the tomatoes, shallots and jalapeno and mix by hand. Refrigerate when done.
