Ingredients:
1 1/2 cups water
1/4 cup sun-dried tomato
1 1/2 cups tomato
1 1/4 cups carrot
1 1/2 cup cashew
3 tsps of lime juice
1 1/2 tsps of sea salt
1/2 tsp of chili powder
Add cilantro for Garnish
Optional Garnish: Olive oil, cayenne pepper
Method:
Soak the sun-dried tomato in warm water for 10 mins while you prepare the other ingredients.
Add all ingredients to blender. Blend until soup is a smooth consistency.
Serve and garnish with cilantro, a drizzle of olive oil, a splash of cayenne ( if you are adventurous)
Keeps 3 days in the refrigerator. Soup can be eaten warm as well. Warm it up gently.
