Ingredients:
1 cup oatmeal flour
1 cup buckwheat flour
1 cup almond flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
4 TBS ground chia seeds and add 4 TBS water (mix to make them gelatinous)
2 cups cooked pumpkin
2-3 TBS coconut oil
2 TBS raw honey
1.5 cups of almond milk to reach desired consistency
Method:
Mix all dry ingredients together in a bowl.
Add in wet ingredients until batter is smooth-ish
Fry pancakes in as much coconut oil as is needed (approx 10 oz or more)
Makes enough to feed a family of 6 and guests! 🙂
Notes: The oatmeal and buckwheat flours, I ground fresh myself in my handy dandy Vitamix. This thing is a beast and I love it!
