Ingredients:
2 cups water
2 cups washed sweet potato (can leave the peel on)
1/2 cup celery
1/3 cup onion
1/3 cup sweet bell pepper
1 avocado
4 Tbs wheat free tamari sauce
10-15 fresh cilantro (stems and leaves)
Method:
In a blender, combine all the ingredients except for half the water and the cilantro. Blend into a smooth paste. Add the remaining water and cilantro. Pulse to incorporate cilantro into the soup, leaving some pieces of leaves.
Will keep in the refrigerator for up to 3 days.
