This is simple to make and a very satisfying dessert to eat. The cost-benefit ratio is a win in my book. It’s vegan, gluten free, easily made paleo- or keto-diet friendly. Omit the sweeteners and it is candida-diet friendly as well. The ingredients are simple and easy to find. I get my raw honey from my local farmer’s market in Troy, NY.
Ingredients:
5 ripe avocados
1 cup coconut cream
1-2 bananas
1 cup raw cacao powder (Can substitute carob)
Pinch of sea salt
Optional: 1/4 cup honey or maple syrup or add drops of liquid stevia to taste
Method:
Scoop out the inside of the avocados. Open a can of coconut milk (upside down). Pour off the liquid and reserve it for a smoothie/shake, etc. Take out the coconut cream for this dessert. Add to a food processor the rest of the ingredients, along with the avocado and coconut cream, and blend till desired consistency. Add more or less of banana/sweeteners as desired. Can be made into a keto friendly dessert as well.
I enjoy this mousse fresh and store some in half pint jars in the refrigerator. It keeps well for a week. My children seem to enjoy it as well. It might please a child in your house too. Add some berries on top or anything else that strikes your fancy.
